Gluten-Free Moist Honey Cake
This spiced honey cake is moist and not too sweet. The coffee and raisins add a delicious burst of flavour.
Serves: one 9-inch cake pan, 8-10 slices

1/2 cup boiling water
2 tbsp. ground coffee (not instant)
2 1/2 cups blanched almond flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. ground clove
1/2 cup honey
1/4 cup oil
2 eggs
1/2 cup raisins

Directions
- Prepare the coffee by pouring boiling water through a filter containing coffee. Discard grounds and let liquid cool.
- In a large bowl combine almond flour, salt, baking soda, cinnamon and clove.
- In a separate bowl combine honey, oil, eggs and coffee.
- Mix wet ingredients into dry, until fully combined. Then, stir in raisins.
- Transfer to a greased and floured 9-inch cake pan, and bake in a preheated oven at 350F for 30-35 minutes.
- Let cool, and serve.
- Store in an airtight container.
