Apple Crumble


Serves: 8"x11" crumble, freezes well
Prep Time: 15 min
Cooking Time: 40 min
Total:  55 min

Ingredients
115 g butter or margarine, melted
1 cup large flake rolled oats
1 cup flour
1/2 tsp. baking powder
1/2 cup sugar
2 tbsp. berry jam
2-3 tsp. ground cinnamon
1/2 lemon, juiced
8 apples, cored, peeled and chopped into chunks

Directions
  1. To make the crumble, combine butter, oats, flour, baking powder, 1 tsp. cinnamon and 1 cup sugar in a large bowl.
  2. Place chopped apples in another large bowl.  Add lemon, jam and 2 tsp. cinnamon.  Mix well.
  3. In a large, deep baking dish, put a bit of crumble to lightly cover the bottom.  Transfer the apple mixture to the dish, spreading it evenly.  Finally, sprinkle the rest of the crumble over top of the apples.
  4. Bake in a preheated oven at 350F for 40 minutes, or until the top has browned.
  5. Serve warm, with vanilla ice cream or frozen yogurt.  Keep refrigerated or frozen.
