Pineapple Kugel

Serves: 8-10
Prep Time: 15 min
Cooking Time: 45-60 min
Total:  60-75 min

Ingredients
225 g egg noodles
3/4 cup cottage cheese
1/2 cup butter or margarine, melted
2/3 cup sugar (or 1/3 sugar, 1/3 apricot jam)
1 lemon, juiced
5 eggs
1/4 cup milk
1 tin crushed or diced pineapple
2 tsp. ground cinnamon

Directions
  1. Cook noodles as directed on package.  Drain and rinse with cold water.
  2. In a large bowl, combine eggs, cottage cheese, sugar, butter, milk and lemon juice.  Stir well.
  3. Transfer noodles to a large casserole dish and dot with pineapple.
  4. Pour egg and cheese mixture over noodles, and using a fork, stir until all noodles are coated.
  5. Sprinkle with cinnamon, or a cinnamon sugar mixture.
  6. Bake in a preheated oven at 325 F for 45 min to an hour.
  7. Serve warm or at room temperature as side dish.
