Tapenade Dip

This green olive tapenade is easy to make and tastes delicious!

Serves: about 2 cups
Prep Time: 8-10 min
Cooking Time: 0 min
Total:  10 min

Ingredients

1 cup pimento olives, drained
1 large tin chickpeas, drained and rinsed
1/2 cup sundried tomato packed in olive oil (use a bit of the oil too)
2 cloves of garlic
1 lemon, juice and zest
pepper
a big handful (about 1 cup) fresh basil
a big handful  (about 1 cup) fresh parsley
a few sprigs (about 1/2 cup) fresh cilantro


Directions
  1. Put all ingredients in a food processor and pulse until desired consistency is reached.  You can leave the tapenade slightly chunky or make it smooth.
  2. Taste and adjust seasoning if necessary.
  3. Serve with fresh pita slices.
