Ingredients
3 large ripe mangoes, peeled and sliced into thin strips
1 medium red onion, finely diced
1 bunch fresh mint leaves, chopped
1/4 cup olive oil
1 1/2 tbsp. apple cider vinegar
1 tbsp. maple syrup
2-3 tbsp. lemon juice
1 tbsp. orange juice
salt and pepper
1/2 cup pecan pieces, toasted

Directions
- In a small bowl whisk olive oil, vinegar, lemon juice, orange juice, salt, pepper and maple syrup. Taste and adjust if necessary.
- Place mangoes, onion and mint in a bowl and toss with dressing. Serve garnished with pecans pieces.
