4 servings of spaghetti, linguini or fettucini pasta
1 tbsp. olive oil
4 garlic scapes, trimmed and chopped
2 cups crimini mushrooms, washed and chopped
salt and pepper
fresh shaved Parmesan cheese, optional

Directions
- In a large pot boil water and cook pasta according to directions on package.
- In a frying pan, heat oil and saute garlic scapes for 2 minutes, until bright green.
- Add mushrooms and saute for another 2-3 minutes.
- Season with salt and pepper to taste.
- Portion hot pasta on to a plate and top with garlic scapes and mushrooms. Garnished with Parmesan cheese and serve immediately.
