Vegan Green Goddess Dressing

A thick, creamy and vegan version of the Green Goddess Dressing that everyone's raving about.

Serves: 1 1/2 cups
Prep Time: 5 min
Cooking Time: 0 min
Total:  5 min

Ingredients
1 small clove garlic
1 cup ripe avocado flesh (1 large or 2 small avocados)
7-8 tbsp. water
2 tbsp. apple cider vinegar
2-3 tbsp. lemon juice
1/4 cup olive oil
1/2 cup fresh basil leaves, packed
1/2 cups fresh parsley, packed
3 green onions, washed trimmed
salt and pepper
1/2 tsp. maple syrup or agave

Directions
  1. Add garlic to the bowl of a food processor and process until minced.
  2. Add remaining ingredients, processing until combined.
  3. Taste and adjust if necessary.
  4. Serve with a big green salad. Refrigerate in an airtight container for up to 4 days.

Cinnamon Sugar Coffee Cake

Serves: 16-18 squares using a 9"x13" cake pan, or 10 slices using a 9" round pan and halving the recipe

Total:  60 min

Ingredients
Cake
3/4 cup butter or margarine, softened
1 1/2 cups sugar
3 cups flour, sifted
4 tsp. baking powder
1 tsp. salt
1 1/4 cup milk or soy milk
3 egg whites, whipped until stiff peaks


Topping
3/4 cup butter, chilled
3/4 cup flour
1 1/2 cup brown sugar
2 tsp. ground cinnamon
1 1/2 cups chopped pecans

Directions
  1. In a bowl, combine flour, baking powder and salt.
  2. In a separate bowl, beat egg whites until they hold stiff peaks.
  3. In another bowl, cream butter and sugar.  Add milk and the flour mixture, alternating and beating well after each addition.
  4. Fold in egg whites.
  5. Spread batter into a well greased baking dish or pan.
  6. To make the topping, combine flour, sugar and cinnamon.  Add butter and using your hands, work into a crumbly mixture.  Add pecans.
  7. Evenly spread crumble topping over the cake batter.
  8. Bake in a preheated oven at 350 F for 40-45 minutes, or until cake has set.
  9. Remove from oven and let cool before serving.
  10. Store cake in an airtight container for 3-4 days.

Vegan Ranch Dressing

A healthier, tasty vegan ranch dressing is delicious and so easy to make!

Serves: 2 cups
Prep Time: 5 min
Cooking Time: 0 min
Total:  5 min

Ingredients
1 1/2 cups silken tofu
1/3 cup apple cider vinegar
1/2 tsp. onion powder
1/2 tsp. garlic powder
1-2 tsp. maple syrup
1-2 tbsp. oil
1/4 tsp. cayenne pepper (optional)
1 tsp. Italian seasoning (optional)
salt and pepper

Directions
  1. Combine all ingredients in a blender and process until smooth.
  2. Adjust seasoning to taste.
  3. Serve chilled, as a dressing over mixed greens or as a dip with carrot, celery or cucumber sticks.

"All Purpose" Dressing

Prep Time: 5 min

Ingredients
1/3 cup extra virgin olive oil
2 tbsp. apple cider vinegar
1-2 tbsp. honey, to taste
1 tsp. Dijon mustard
1 tsp. soy sauce
1 tbsp. sesame seeds
1 tbsp. poppy seeds
salt and pepper
1/2 small white onion, minced
1 clove garlic, pressed
1/4 tsp. chili flakes (optional)

Directions
  1. Whisk together all ingredients.
  2. Use dressing on green salad, bean salad, pasta salad, as a marinate for grilled, steamed or roasted vegetables, for fish, chicken or steak.
  3. Keep refrigerated for up to a week.

Judy's Dressing

Serves: about 1 cup dressing

Ingredients
1/3 cup apple cider vinegar or red wine vinegar 
2/3 cup vegetable or canola oil
2 tbsp. mayonnaise
1-2 tsp. white sugar or honey
1 tsp. balsamic vinegar
dried oregano and basil
salt and pepper

Directions
  1. Combine all ingredients in a jar and shake well.
  2. Taste and add more mayonnaise or sugar if too tart.
  3. Serve on mixed green salad and keep refrigerated.
