These tofu bites may be small but are packed with flavour. Serve on little skewers as an appetizer, as a filling for a wrap, as a topping for a salad, or with stir-fried vegetables.

Ingredients
1 package extra firm tofu
3 tbsp. cup soy sauce or teriyaki
1/2 tbsp white vinegar
2 tbsp. ketchup
1 tbsp. maple syrup
dash of hot sauce or a sprinkle of chili flakes
1-2 cloves garlic, pressed
1/ tsp. grated ginger root
1 tbsp. black or white sesame seeds
1 spring onion, sliced finely
3 tbsp. cup soy sauce or teriyaki
1/2 tbsp white vinegar
2 tbsp. ketchup
1 tbsp. maple syrup
dash of hot sauce or a sprinkle of chili flakes

Directions
- Gently press excess water out of the tofu with a paper towel. Cut the tofu into small pieces, about 1/2 inch cubes.
- In a separate bowl, mix other ingredients into a sauce.
- Marinate tofu for 10 minutes or more, up to 1 day, gently mixing so that all pieces are coated.
- Preheat oven at 375 F and line a baking sheet with parchment paper.
- Spread tofu out in a single layer.
- Bake for 15 minutes. With a spatula turn tofu and bake for another 15 minutes until browned.
- Serve warm as an appetizer, as a side dish with stir fry, in sandwiches or wraps, or cold on a salad.
