An easy make-ahead bean salad that is colourful, packed with protein and very filling.

Ingredients
1 tin chickpeas, drained and rinsed
1 tin red kidney beans, drained and rinsed
1 tin black eyed peas or navy beans, drained and rinsed
2 stalks of green onion, sliced
1 red pepper, sliced (optional)
Dressing
1/4 cup olive oil1/3 cup white wine vinegar
1-2 tbsp mayonnaise
3 tbsp. regular or white balsamic vinegar (or more)
1 tsp honey
salt and pepper
oregano or basil
Directions
- In a jar, add dressing ingredients and shake to mix. Taste and adjust if necessary.
- Mix beans with green onion and dressing. Cover and refrigerate for a couple of hours, up to 1 day, to allow dressing soak in.
- Before serving add red pepper and mix well.
