Moist and bursting with banana, cranberries and optional chocolate chips, these muffins make the perfect snack or breakfast on-the-go. They travel well and freeze nicely.
Ingredients
Serves: 12-18 muffins, depending on size
Prep Time: 10 min
Cooking Time: 18-20 min
Total: 30 min
1 1/2 cups flour
1 cup large flake oats
1/2 cup sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Wet:
3 ripe bananas, mashed
1 egg
3/4 cup milk or substitute
1/3 cup vegetable oil
dash of vanilla
1 cup fresh cranberries
1/2 cup dark chocolate chips, optional
Directions
- Combine dry and wet ingredients in separate bowls.
- Add wet to dry and mix well.
- Add fresh cranberries and optional chocolate chips, and mix until combined.
- Spoon batter into muffin wells lined with paper baking cups.
- Preheat oven at 400 F and bake for 18-20 minutes, using a toothpick to check when it's done.
- Allow to cool before serving.
