These date squares are an incredible combination of dates, cranberries, chocolate and a hint of lime. You will have everyone asking for the recipe!

Ingredients
1 1/2 cups rolled oats
1/4 cup unsweetened coconut
1 cup flour
1/2 tsp baking soda
1/2 cup ground flax (optional)
1/2 cup brown sugar
3/4 cup butter or margarine, melted
Filling:
1 1/2 cup baking dates, cut into small pieces
1/2 cup dried cranberries
1 cup water
1/4 cup white sugar
1/2 cup dark chocolate chips
1 lime, rind and juice
Directions
- To make the filling, put the dates, cranberries, sugar and water into a pot. Mix with a spoon. Boil on medium heat with the lid on until mixture is thick, about 15 min. Add chocolate chips and lime, mix well.
- In a separate bowl, mix together all crumble ingredients. Place half of the mixture in glass or ceramic dish and press it down.
- Spread the filling over the crumble layer. Then sprinkle the remaining mixture over top.
- Bake at 350 F for 25-30 min, or until the top is golden brown.
- Serve plain or with vanilla ice cream or soy ice cream.
