Ingredients
1 cup cornmeal
1 cup flour
1 tsp. baking soda
1/4 tsp. salt
1 cup unsweetened applesauce
1 cup plain almond milk or soy milk
3-4 tbsp. maple syrup or agave
2 tbsp. canola oil

Directions
- Combine cornmeal, flour, baking soda and salt in a mixing bowl.
- In a separate bowl whisk applesauce, almond milk, maple syrup and oil together.
- Add wet mixture to dry and stir until combined.
- Transfer to a paper lined or greased muffin tin and bake for 15-20 minutes in a preheated oven at 325 F. Test with a skewer for doneness.
- Cool and serve. Makes a great accompaniment to a warm bowl of vegetarian chili.
