Asian Cucumber Salad

An Asian inspired cucumber salad is easy to make and is a great side dish!

Ingredients
1 English cucumber, thinly sliced
1/2 tsp. salt
1 tbsp. sesame oil
2 tbsp. seasoned rice vinegar
1 tbsp. soy sauce
1 tsp. liquid honey
1/2 tsp. dried chili flakes
1 green onion, sliced into small pieces
1-2 tbsp. toasted sesame seeds, to garnish

Directions
  1. Place cucumber slices in a bowl and salt.  Let stand for 15 minutes.  Soak up excess liquid with a paper towel.  To make the salad less watery, remove the seeds from the cucumber by cutting it lengthwise, scooping the seeds with a spoon and then slicing it.
  2. Whisk together sesame oil, rice vinegar, soy sauce, honey and chili flakes.
  3. Pour over cucumber slices and add green onion.  Mix well and let marinate for another 5 minutes.
  4. Garnish with sesame seeds and serve immediately.
