Easy Potato Gnocchi

Gnocchi with basil pesto
Serves: 2-3
Prep Time: 15 min
Cooking Time: 15 min
Total:  30 min

Ingredients
1 cup water
1 egg
1 tsp. margarine, melted
1 cup flour
2 cups instant potato flakes
salt and pepper

Directions
  1. In a large bowl, mix together egg, margarine, water, salt and pepper.  Add flour and potato flakes and mix well.
  2. Using your hands, knead dough.  Add more water if dough is too dry, careful that the dough does not become sticky.
  3. Roll into "snakes" and cut into half inch pieces with a knife.
  4. Using the front of a fork, roll and press each gnocchi to form groves.  This is just for decoration.  You can also make them any shape you like.
  5. Bring a pot of water to boil and gently boil gnocchi until they float to the top, about 10 minutes.  Cook for an additional 3-5 minutes. 
  6. Remove gnocchi with a slotted spoon and serve with your favorite sauce.
