Strawberry Shortcake Popsicles

Cool down on a hot summer day with a strawberry shortcake Popsicle.

Serves: about 7-8 popsicles, depends on size of mold
Prep Time: 8-10 min
Assembly Time: 35 min, plus freezing 
Total:  35 min, plus freezing

Ingredients
2 cups vanilla yogurt, or plain with added vanilla
1/3 cup vanilla cookie crumbs (or crushed vanilla oreos)
1  cup fresh strawberries
1 tbsp. sugar (or more)

Directions
  1. In a bowl, stir together yogurt and cookie crumbs.  Spoon a layer into the bottom of popsicle mold (you can use a store-bought one, or small paper or plastic cups with wooden sticks).
  2. Freeze for 15-20 minutes.
  3. Wash and puree strawberries in a blender or food processor.  Add sugar to taste.
  4. Remove popsicles from freezer and spoon a layer of strawberry puree into the mold.
  5. Freeze for another 15-20 minutes.
  6. Remove from the freezer and spoon the final layer of vanilla crumb yogurt into the mold.  Insert sticks in the centre and freeze overnight.
