Basic Potato Salad

Serves:  6-7
Prep Time: 10 min
Cooking Time: 20-30 min
Total: 40 min

Ingredients
5 medium potatoes
2-3 tbsp. mayonnaise (or more)
1 bunch chives, finely chopped
salt and pepper

Directions
  1. Wash potatoes and place in a large pot.  Cover with water and boil for 20-30 minutes, or until soft when pricked with a fork.
  2. Drain and let cool.
  3. Peel the skin off each potato and slice into cubes.
  4. In a bowl, mix potato slices, mayonnaise and chives.  Add salt and pepper to taste.
  5. Serve cold or room temperature.  Eat as a main meal or a side dish for meat or fish.
