Sweet Crepes

A delicious weekend breakfast of sweet crepes is surprisingly easy to make!

Serves: 10-12 crepes
Prep Time: 5-8 min
Cooking Time: 15 min
Total:  20 min

Cinnamon sugar & lemon, blueberries & maple syrup, nutella & raspberries
Ingredients
4 eggs, lightly beaten
1 1/3 cups milk, soy milk or almond milk
2 tbsp. butter or margarine, melted
1/2 tsp. vanilla extract
1 cup flour
2 tbsp. sugar
1/2 tsp. salt
1-2 tsp. lemon or orange zest (optional)

cinnamon sugar and lemon juice
lemon ricotta
nutella and banana slices
berry jam
apple butter
fresh mixed berries (strawberries, raspberries, blueberries, blackberries, cherries)
stewed apples
tin fruit (mandarin oranges, peaches, pineapple)
apple sauce and cinnamon
charoset
compote
peanut or almond butter
dessert hummus
maple syrup
agave
healthy chocolate spread
dulce de leche
chocolate sauce
honey
powdered sugar
fruit salad
whipped cream or creme fraiche
ice cream or frozen yogurt
pecans, walnuts, almond slivers

Directions
  1. In a large bowl, combine all ingredients and whisk until there are no lumps.  Alternatively, combine all ingredients in a bowl, mix and then transfer into a blender.  Blend until smooth.
  2. Heat a large skillet over medium heat. Coat with non stick spray, oil or butter.
  3. Ladle about 3 tbsp. of batter into the pan.  Tilt to spread batter across the pan evenly.
  4. Cook for 1-2 minutes, then carefully flip and cook the other side for another minute.
  5. Spread your favourite fillings on the crepe and then roll or fold it. Serve immediately.
