Chocolate Dipped Frozen Bananas


A super fun and super healthy snack for the summer!

Serves: 8 banana pops
Prep Time: 5-7 min, plus overnight freezing
Cooking Time: 3 min
Total:  10 min, plus overnight freezing

Ingredients
4 bananas, ripe but firm
8 popsicle or lollipop sticks
2 tbsp. coconut oil
1/2 cup dark chocolate chips
assorted sprinkles or chopped nuts, optional

Directions
  1. Line a baking sheet with wax paper or parchment paper.
  2. Peel and slice each banana in half, inserting a stick into the sliced end.
  3. Carefully arrange on the baking sheet and freeze overnight until solid.
  4. Once the bananas are frozen, prepare to dip them in chocolate.
  5. Arrange your toppings so that they are ready to be sprinkled immediately after the banana is dipped in chocolate.
  6. Melt coconut oil and chocolate chips in a small sauce pan on low heat. Stir often.
  7. Use one of two methods to coat the banana in chocolate: dip the banana into the saucepan and twirl to coat. Or, spoon chocolate over banana.
  8. Remove banana from chocolate and quickly sprinkle desired topping, coating evenly. The frozen banana paired with the coconut oil in the chocolate mixture, makes the chocolate form a shell and dry really fast.
  9. Serve immediately or return to the wax paper lined baking sheet.  Freeze until ready to eat.
