Ingredients
5-6 medium-sized beets (any type)
1-2 tbsp. extra virgin olive oil
2-3 tbsp. balsamic vinegar
salt and pepper

Directions
- Rinse beets and scrub them well. Trim the top, leaving about 1/2 inch of stem.
- Boil beets for 15, then drain and remove the skin using a peeler or a thin knife.
- Cut peeled beets into bite sized chunks, and place in a large bowl.
- Toss with olive oil, balsamic vinegar, salt and pepper.
- Spread on a baking sheet lined with parchment paper and bake in a preheated oven at 350 F until they have caramelized, about 35 minutes.
- Serve warm or room temperature a side dish to meat or fish, or garnish with crumbled feta cheese and serve as a salad.
