3 ripe medium size peaches, sliced
1/2 cup fresh raspberries, pitted cherries or cranberries (optional)

1/2 lemon, juiced
1 tbsp. maple syrup
1 tsp. ground cinnamon
dash of cayenne pepper (optional)
Topping
1/4 cup flour
1 1/2 cups whole oats
1/4 cup butter or vegan margarine, cut into cubes
1/4 cup sugar (or less)
1/2 tsp. baking powder
1 tbsp. ground flax seed (optional)
Directions
- Place all filling ingredients in a large bowl. Toss to combine.
- In a separate bowl, add all of the topping ingredients, except the butter. Stir together.
- Add the butter to the topping mixture, cutting it into the mixture with your fingers. It should form a crumble.
- Add all of the fruit filling mixture into a greased pie dish, then spoon the crumbled topping over the filling.
- Bake in a preheated oven at 375F for 25-30 minutes.
- Cool for 5 minutes, then serve with whipped cream or ice cream, and garnish with fresh berries.
