Peach Crisp

Celebrate summer harvest with this delicious peach and berry crisp.

Serves: 6
Prep Time: 20 min
Cooking Time: 25-30 min
Total:  50 min

Filling
3 ripe medium size peaches, sliced
1/2  cup fresh raspberries, pitted cherries or cranberries (optional)
1/2 lemon, juiced
1 tbsp. maple syrup
1 tsp. ground cinnamon
dash of cayenne pepper (optional)

Topping
1/4 cup flour
1 1/2 cups whole oats
1/4 cup butter or vegan margarine, cut into cubes
1/4 cup sugar (or less)
1/2 tsp. baking powder
1 tbsp. ground flax seed (optional)

Directions
  1. Place all filling ingredients in a large bowl.  Toss to combine. 
  2. In a separate bowl, add all of the topping ingredients, except the butter.  Stir together.
  3. Add the butter to the topping mixture, cutting it into the mixture with your fingers.  It should form a crumble.
  4. Add all of the fruit filling mixture into a greased pie dish, then spoon the crumbled topping over the filling.
  5. Bake in a preheated oven at 375F for 25-30 minutes.
  6. Cool for 5 minutes, then serve with whipped cream or ice cream, and garnish with fresh berries.
