Watermelon and Grapefruit Salad


Watermelon and grapefruit salad is brightly coloured, juicy and fresh!

Serves: 3-4
Prep Time: 15 min

Total:  15 min

Ingredients
1/4 watermelon, cut into wedges
1 large grapefruits, peeled and segmented
1/2 red onion, thinly sliced
1 lime, juiced
1 bunch mint leaves, chopped
1-2 tbsp. extra virgin olive oil
1 tbsp. apple cider or white wine vinegar
salt and pepper
1-2 tbsp. feta cheese, crumbled (optional)

Directions
  1. Place watermelon and onion slices on a serving platter.
  2. Cut the grapefruits into wedges.  Slice away the skin, placing the fruit wedge on the serving platter.  Squeeze the peel over a bowl or measuring cup to catch the juice.
  3. Whisk grapefruit juice with lime juice, salt, pepper, vinegar, oil and mint leaves.  
  4. Serve dressing on the side or drizzle over the salad.  Garnish with extra mint leaves and crumbled feta.
