Watermelon and grapefruit salad is brightly coloured, juicy and fresh!
1/4 watermelon, cut into wedges
1 large grapefruits, peeled and segmented
1/2 red onion, thinly sliced
1 lime, juiced
1 bunch mint leaves, chopped
1-2 tbsp. extra virgin olive oil
1 tbsp. apple cider or white wine vinegar
1 tbsp. apple cider or white wine vinegar
salt and pepper
1-2 tbsp. feta cheese, crumbled (optional)
Directions
- Place watermelon and onion slices on a serving platter.
- Cut the grapefruits into wedges. Slice away the skin, placing the fruit wedge on the serving platter. Squeeze the peel over a bowl or measuring cup to catch the juice.
- Whisk grapefruit juice with lime juice, salt, pepper, vinegar, oil and mint leaves.
- Serve dressing on the side or drizzle over the salad. Garnish with extra mint leaves and crumbled feta.
