Stone Fruit Crumble

The three types of stone fruit inside this crumble make it irresistible. Serve warm with vanilla ice cream or frozen yogurt.

Serves: 8, freezes well

Ingredients
4 ripe plums, stones removed and chopped
3 ripe peaches, stones removed and chopped
3 ripe nectarines, stones removed and chopped
1-2 tbsp. maple syrup
1 cup large flake oats
1/2 cup flour
1/3 cup butter or margarine, melted
2 tbsp. sugar
1 tsp. baking powder

Directions
  1. To make the topping, combine butter, oats, flour, baking powder and sugar in a large bowl and use your hands to form a crumbly mixture.
  2. Place chopped stone fruit in another large bowl.  Add maple syrup and mix well.
  3. In a large rectangular, deep baking dish, put a bit of crumble to lightly cover the bottom.  Transfer the fruit mixture to the dish, spreading it evenly.  Finally, sprinkle the rest of the crumble over top of the fruit.
  4. Bake in a preheated oven at 350F for 40 minutes, or until the top has browned.
  5. Serve warm, with vanilla ice cream or frozen yogurt.  Keep refrigerated or frozen.
