White Rabbit Salad

Serve this delicious White Rabbit salad as a healthy breakfast or appetizer.

Ingredients
2 cups thick creamed cottage cheese
2 apples, chopped
1/4 cup raisins
1/2 cup chopped nuts, toasted
1/4 cup sunflower seeds, toasted
2 tsp. poppy seeds
1-2 tbsp. honey or maple syrup
1/2 lemon, juice
a bunch of baby mixed greens

Directions
  1. In a bowl combine all of the ingredients, except for mixed greens. Cover and refrigerate until very cold.
  2. Plate a handful of mixed greens, scooping a portion of the salad on top.
  3. Serve immediately.
