1 tbsp. olive oil
1 onion, sliced into thin rings
2 bell peppers, sliced into strips
2 tbsp. balsamic vinegar
salt and pepper

Directions
- In a frying pan heat oil and saute onions until lightly browned.
- Add bell peppers and saute for 5 minutes, until tender.
- Add balsamic and allow to reduce. Keep stirring, to avoid burning.
- Season with salt and pepper and serve. Use in sandwiches, salads or as a side dish.
