1/2 cup spring onions, chopped

Directions
- In a large pot add spring onions, potato, garlic and water. Boil for about 15 minutes, until potatoes are tender.
- Add peas and cook for 4-5 minutes, just until peas have cooked and still remain bright green.
- Add fresh basil, lemon juice and puree using a handheld immersion blender. Add salt and pepper to taste.
- Serve chilled or at room temperature, garnished with crumbled feta.
