Directions
- Combine all ingredients, except for pepitas in a large bowl and toss to combine.
- Refrigerate for 3-4 hours, allowing the flavours to soak in.
- Serve slightly chilled and garnished with toasted pepitas. This salad can also be served for breakfast with plain yogurt or cottage cheese.
