Scrambled Eggs with Onions and Smoked Salmon

Smoked salmon and onions transform scrambled eggs into a delicious breakfast.

Serves: 2
Prep Time: 5 min
Cooking Time: 5 min
Total:  10 min

Ingredients
4-5 eggs, whisked
2-3 tbsp. milk, soy milk or rice milk
1 tsp. oil or melted butter
1 medium onion, chopped
3-4 pieces smoked salmon, sliced into smaller pieces
salt and pepper

Directions
  1. In a frying pan heat oil or butter. Saute onions until browned.
  2. In a separate bowl whisk eggs with milk.
  3. Add eggs and smoked salmon pieces to the frying pan. Stir frequently, allowing to cook.
  4. Add salt and pepper to taste and serve immediately with a toasted bagel or slice of bread.

Big Salad

This light and fulfilling salad is packed with so many textures and flavours, it's bound to be a summer favourite!

Serves:  4

Ingredients
1 head romaine lettuce, washed and cut
1/3 English cucumber, sliced
1 cup cherry tomatoes or 1-2 tomatoes, sliced
1 red or yellow pepper, sliced into strips
1 cup baby carrots or shredded carrots
1 tin chickpeas, drained and rinsed
1 tin tuna, drained and flaked
2 tbsp. mayonnaise
1 lime, juiced
fresh rosemary, finely chopped
fresh chives or green onion, finely chopped
2-3 tbsp. white balsamic vinegar
pepper

Directions
  1. In a large bowl combine all ingredients and toss together.
  2. Taste and adjust seasoning if necessary.
  3. Serve immediately.

Tuna Casserole


Tuna casserole is an easy dish to throw together, and pleasing for all!

Serves:  8
Prep Time:  15 min
Cooking Time: 30 min
Total: 45 min

Ingredients
2 tins tuna, drained and flaked
1 cup frozen peas
1 tbsp. butter or margarine
5-6 mushrooms, washed and sliced
2-3 cloves garlic, diced
3 cups uncooked pasta, fuisilli or shells
grated cheese, to garnish
cheese sauce or can of condensed cream of mushroom soup

Directions
  1. In a large pot, boil water and prepare pasta as directed.  Drain and return to pot.  Add frozen peas to the pasta and mix.
  2. In a frying pan, melt butter and sautee mushrooms.  Add garlic and cook until tender.  Add to cooked pasta.
  3. Add cheese sauce or tin of cream of mushroom soup to the pasta and vegatable mixture.  Stir to combine.
  4. Transfer to a casserole dish and top with grated cheese. Cover with tinfoil and bake in a preheated oven at 350F for 15-20 minutes.
  5. Serve warm with a green salad or steamed vegetables.

Oven Baked Trout or Salmon Fillet

Serves: 4
Prep Time: 5 min
Cooking Time: 20-30 min
Total:  35 min

Ingredients
1 trout or salmon fillet (1.25 lbs)
2-3 tbsp. soy sauce
1 tbsp. maple syrup
black or white sesame seeds to garnish

Directions
  1. Cover a baking sheet with parchment paper and preheat the oven to 350 F.
  2. In a small bowl, mix together soy sauce and maple syrup.
  3. Rinse fillet and pat dry with a paper towel.
  4. Place fillet on baking sheet and brush with sauce until there is none left.
  5. Sprinkle with sesame seeds.
  6. Bake for 20-30 minutes, or until tender and cooked.
  7. Serve with rice, potatoes, steamed or grilled vegetables, or a side salad.

Salmon Cakes

Beautiful salmon cakes can be served with a salad or vegetables for a satisfying lunch or light dinner.

Serves: 2-3
Prep Time:  25 min
Cooking Time: 8 min
Total:  35 min

Ingredients
1 tin salmon (7.5 oz), drained and flaked
1 medium potato, boiled and mashed
1 carrot, peeled and grated (optional)
1 green onion or bunch of chives, chopped
1 egg, scrambled
1-2 tsp. vegetable oil

Spicy
1 tsp. Dijon mustard
dash of hot sauce or cayenne pepper
paprika
pepper

Herb
fresh basil, finely chopped
fresh rosemary, finely chopped
1/2 lime, juiced
pepper

Directions
  1. In a pot, boil potato in salted water until tender when pricked with a knife, about 15 to 20 minutes. Drain, peel and mash.
  2. In medium bowl, add tin of salmon.  Remove small bones and skin if desired, and flake.
  3. Add mashed potatoes, grated carrot, green onions, scrambled egg, and spices or herbs.  Combine together.
  4. Using hands, shape into 5-6 patties.
  5. Heat oil in a frying pan and cook patties for 5-7 minutes per side, or until crispy.
  6. Serve immediately with a grilled vegetables or a mixed vegetable salad.

Tuna Salad

Tuna salad like you've never had before, with lime, chives and mayonnaise bringing out the best flavours.

Serves:  2
Prep Time:  5 min
Cooking Time: 0 min
Total: 5 min

Ingredients
1 tin flake or chunk tuna, drained
1 lime, juiced
1 tbsp. mayonnaise
1 bunch chives or 1 green onion, chopped
fresh rosemary, finely chopped (optional)
fresh ground pepper

Directions
  1. Empty tuna in a bowl and flake with a fork.
  2. Add the rest of the ingredients and mix well.
  3. Serve in a sandwich, pita or wrap, with crackers, or on a salad.
