Beautiful salmon cakes can be served with a salad or vegetables for a satisfying lunch or light dinner.

Ingredients
1 tin salmon (7.5 oz), drained and flaked
1 medium potato, boiled and mashed
1 carrot, peeled and grated (optional)
1 green onion or bunch of chives, chopped
1 egg, scrambled
1-2 tsp. vegetable oil
Spicy
1 tsp. Dijon mustard
dash of hot sauce or cayenne pepper
paprika
pepper
Herb
fresh basil, finely chopped
fresh rosemary, finely chopped
1/2 lime, juiced
pepper
Directions
- In a pot, boil potato in salted water until tender when pricked with a knife, about 15 to 20 minutes. Drain, peel and mash.
- In medium bowl, add tin of salmon. Remove small bones and skin if desired, and flake.
- Add mashed potatoes, grated carrot, green onions, scrambled egg, and spices or herbs. Combine together.
- Using hands, shape into 5-6 patties.
- Heat oil in a frying pan and cook patties for 5-7 minutes per side, or until crispy.
- Serve immediately with a grilled vegetables or a mixed vegetable salad.
