Carrot Muffins

Serves:  12, freezes well
Prep Time: 10-15 min
Cooking Time: 20 min
Total: 30-35 min

Ingredients
2/3 cup brown sugar
3/4 cup flour
1 1/2 cups quick oats
2 tsp. baking powder
1/4 tsp. baking soda
2 tsp. ground cinnamon
1/4 tsp. salt
1 tbsp. vegatable oil
3/4 cup milk or soy milk
1 tsp. vanilla extract
2 eggs
1 1/2 cups grated carrots
1/2 cup raisins (optional)

Directions
  1. Combine sugar, flour, oats, baking powder, baking soda, cinnamon and salt in a large bowl.  Mix together.
  2. Add oil, milk, vanilla, eggs and mix well.
  3. Stir in grated carrots and raisins.
  4. Spoon mixture into a muffin tin lined with paper baking cups.
  5. Preheat oven at 350 F and bake for 18-20 min.  Check with toothpick
