1 1/2 cups quick oats
2 tsp. baking powder
1/4 tsp. baking soda
2 tsp. ground cinnamon
1/4 tsp. salt
1 tbsp. vegatable oil
3/4 cup milk or soy milk
1 tsp. vanilla extract
2 eggs
1 1/2 cups grated carrots
1/2 cup raisins (optional)

Directions
- Combine sugar, flour, oats, baking powder, baking soda, cinnamon and salt in a large bowl. Mix together.
- Add oil, milk, vanilla, eggs and mix well.
- Stir in grated carrots and raisins.
- Spoon mixture into a muffin tin lined with paper baking cups.
- Preheat oven at 350 F and bake for 18-20 min. Check with toothpick
