Ingredients
1 cup dry penne pasta (whole wheat)
1 clove garlic, diced
1/2 onion, chopped
1 large chicken breast, cut into small pieces
2 handfuls baby spinach
3-4 leaves fresh basil, chopped
4-5 mushrooms, sliced
1 tsp. oil
2 tbsp. butter
2 tbsp. flour
1 cup milk
1/2 cup grated cheese or 2 tbsp. nutritional yeast flakes
1/2 cup grated cheese or 2 tbsp. nutritional yeast flakes
salt and pepper
Directions
- In a pot, heat water. When it boils, add penne and cook until tender, about 15 minutes. Rinse penne to remove starch and return to pot.
- While penne is cooking, make a béchamel sauce (white sauce).
- In a frying pan heat oil on medium heat. Add chicken pieces and stir fry until fully cooked. Add onions and garlic and saute for 3 minutes. Add mushrooms, cook for 1 minute, then add baby spinach and basil. Cook for 2 minutes.
- Add chicken mixture and béchamel sauce to the pot of prepared penne and stir.
- Season with salt and pepper and serve immediately.
