1/3 cup unsweetened apple sauce (or oil)
2/3 cup brown sugar
1/4 cup white sugar
1 egg
1/3 cup natural peanut butter (smooth or chunky)
1 cup plain yogurt
1 tsp. vanilla
1 cup flour (whole wheat or white)
3/4 cup quick oats
1 tsp. baking soda
1 1/2 tsp. baking powder
1/4 cup unsweetened cocoa powder
1 tsp. salt
1/4 cup semisweet chocolate chips
Directions
- Preheat oven to 375 F and line a muffin tin with paper cups.
- In a large bowl, mix together apple sauce, sugars, egg, peanut butter, vanilla and yogurt.
- In a separate bowl, combine flour, oats, baking powder, baking soda, cocoa powder and salt.
- Slowly mix dry ingredients into wet. Stir in chocolate chips.
- Spoon into prepared muffin tin and bake for 15-18 minutes. Check with a toothpick to see if muffins are ready.
