Ingredients
2-3 tbsp. peanut oil
2 cups chopped onion
3 cloves garlic, minced
2 tbsp. minced fresh ginger
2 tsp. salt
2 tsp. dry mustard
1 tsp. tumeric
1 tsp. ground cumin
1/2 tsp. cardamom
1/2 tsp. allspice
1/4 tsp. cayenne pepper
5-6 tart apples, peeled, cored and chopped
4 cups water
1 cinnamon stick
1-2 tbsp. fresh lemon juice
2-3 tbsp. honey or brown sugar, optional
toasted unsweetened shredded coconut, to garnish
toasted slivered almonds, to garnish
plain yogurt, to garnish
dried currants, to garnish

Directions
- In a large pot, heat oil. Add onion, garlic, ginger and salt and saute over medium heat until onions begin to soften, about 5 minutes.
- Add spices and saute for another 2-3 minutes until fragrant.
- Add apples, water, cinnamon stick and lemon juice. Bring to boil, then turn down the heat and simmer for about 10 minutes, or until apples are tender.
- Remove from heat and remove cinnamon stick. Using a handheld immersion blender, puree until smooth.
- Taste and add honey or sugar if needed, or more salt.
- Serve hot or cold, garnished with yogurt, toasted almonds, toasted coconut and currant.
