Curried Apple Soup

A soup for the culinary adventurous that's a combination of sour, sweet and spiced flavours.

Serves: 6

Cooking Time: 20 min
Total:  30 min

Ingredients
2-3 tbsp. peanut oil
2 cups chopped onion
3 cloves garlic, minced
2 tbsp. minced fresh ginger
2 tsp. salt
2 tsp. dry mustard
1 tsp. tumeric
1 tsp. ground cumin
1/2 tsp. cardamom
1/2 tsp. allspice
1/4 tsp. cayenne pepper
5-6 tart apples, peeled, cored and chopped
4 cups water
1 cinnamon stick
1-2 tbsp. fresh lemon juice
2-3 tbsp. honey or brown sugar, optional
toasted unsweetened shredded coconut, to garnish
toasted slivered almonds, to garnish
plain yogurt, to garnish
dried currants, to garnish

Directions
  1. In a large pot, heat oil.  Add onion, garlic, ginger and salt and saute over medium heat until onions begin to soften, about 5 minutes.
  2. Add spices and saute for another 2-3 minutes until fragrant.
  3. Add apples, water, cinnamon stick and lemon juice.  Bring to boil, then turn down the heat and simmer for about 10 minutes, or until apples are tender.
  4. Remove from heat and remove cinnamon stick.  Using a handheld immersion blender, puree until smooth.
  5. Taste and add honey or sugar if needed, or more salt.
  6. Serve hot or cold, garnished with yogurt, toasted almonds, toasted coconut and currant.
