Beautifully presented zucchini pizza boats make a great main meal!

Ingredients
2 medium zucchinis, washed and sliced lengthwise in half
1/3 cup tomato sauce (or more if needed)
1 clove garlic, finely chopped
1-2 tbsp. finely diced onion
1-2 mushrooms, chopped in small pieces
1 tbsp. parmesan cheese
1 tsp. oregano and basil
salt and pepper
grated cheddar, mozzarella cheese or vegan cheese, to garnish
sliced black olives, to garnish
Directions
- Scoop out the inside of the zucchini with a spoon. Set zucchini shells to the side and cut the zucchini flesh into small pieces.
- In a bowl, mix zucchini pieces, with garlic, onion, mushrooms, parmesan cheese and tomato sauce. Season with herbs, salt and pepper.
- Spoon mixture into zucchini shells and place on a baking sheet.
- Garnish zucchini boats with grated cheese and black olives, and bake in a preheated oven at 425F for about 20-30 minutes, or until zucchini shells have softened and cheese has melted.
- Serve immediately, with a side salad.
