Serves: 2 cups
1 fennel bulb, trimmed, cored and thinly sliced
1 large onion, thinly sliced
2 tsp. olive oil
salt and pepper

Directions
- In a frying pan that has a lid, heat oil on medium-high. Add fennel, onion, salt and pepper and cover with lid.
- Cook, stirring frequently for about 5-8 minutes, until the fennel and onions begin to brown.
- Reduce heat to medium and cook for another 5-8 minutes.
- Remove lid and add water. Stir until water has evaporated and mixture had browned.
- Serve immediately, as a side for meat or fish, stirred into cooked rice or quinoa, or used as a topping for pizza.
