Caramelized Fennel and Onions

Caramelized fennel and onions are a perfect side dish for meat or fish, addition to a grain salad, or a delicious pizza topping.

Serves: 2 cups
Prep Time: 5 min
Cooking Time: 10 min
Total:  15 min

Ingredients
1 fennel bulb, trimmed, cored and thinly  sliced
1 large onion, thinly sliced
2 tsp. olive oil
salt and pepper
1 tbsp. water

Directions
  1. In a frying pan that has a lid, heat oil on medium-high. Add fennel, onion, salt and pepper and cover with lid.
  2. Cook, stirring frequently for about 5-8 minutes, until the fennel and onions begin to brown.
  3. Reduce heat to medium and cook for another 5-8 minutes.
  4. Remove lid and add water. Stir until water has evaporated and mixture had browned.
  5. Serve immediately, as a side for meat or fish, stirred into cooked rice or quinoa, or used as a topping for pizza.
