5 medium potatoes
2-3 tbsp. mayonnaise (or more)
1 bunch chives, finely chopped
salt and pepper

Directions
- Wash potatoes and place in a large pot. Cover with water and boil for 20-30 minutes, or until soft when pricked with a fork.
- Drain and let cool.
- Peel the skin off each potato and slice into cubes.
- In a bowl, mix potato slices, mayonnaise and chives. Add salt and pepper to taste.
- Serve cold or room temperature. Eat as a main meal or a side dish for meat or fish.
