Serves: 14-16 square pieces
2 cups flour
2/3 cup cocoa powder
1/2 tsp. salt
1 tsp. baking powder
1/2 cup sugar
1 1/2 cups milk or soy milk
3/4 cup unsweetened applesauce
1 tsp. vanilla essence
1 egg, whisked
1/2 cup dark chocolate chips (or more)
1/2 pint fresh raspberries
Directions
- In a large bowl, mix together dry ingredients - flour, cocoa powder, salt, baking powder and sugar.
- In a separate bowl, combine wet ingredients - milk, applesauce, vanilla and egg.
- Add wet ingredients to dry and stir until combined. If mixture is not wet enough, add a little bit of milk, applesauce, or some water.
- Stir in chocolate chips and then fold in the raspberries.
- Grease a 8x8 inch baking dish and pour in batter. Bake in a preheated oven at 350 F for 25-30 minutes. Remove from oven when an inserted toothpick comes out clean.
- Serve warm or room temperature with ice cream or frozen yogurt, and fresh raspberries.
