Chocolate Raspberry Brownies

Make dense and delicious raspberry and chocolate brownies for dessert.

Serves: 14-16 square pieces
Prep Time: 20 min
Cooking Time: 25-30 min
Total:  50 min

Ingredients
2 cups flour
2/3 cup cocoa powder
1/2 tsp. salt
1 tsp. baking powder
1/2 cup sugar
1 1/2 cups milk or soy milk
3/4 cup unsweetened applesauce
1 tsp. vanilla essence
1 egg, whisked
1/2 cup dark chocolate chips (or more)
1/2 pint fresh raspberries

Directions
  1. In a large bowl, mix together dry ingredients - flour, cocoa powder, salt, baking powder and sugar.
  2. In a separate bowl, combine wet ingredients - milk, applesauce, vanilla and egg.
  3. Add wet ingredients to dry and stir until combined.  If mixture is not wet enough, add a little bit of milk, applesauce, or some water.
  4. Stir in chocolate chips and then fold in the raspberries.
  5. Grease a 8x8 inch baking dish and pour in batter.  Bake in a preheated oven at 350 F for 25-30 minutes.  Remove from oven when an inserted toothpick comes out clean.
  6. Serve warm or room temperature with ice cream or frozen yogurt, and fresh raspberries.
