Light Summer Salad

Lighten up with this summer salad.

Ingredients
6-8 strawberries, hulled and sliced
1 cup watermelon, cubed
2 handful arugula
4 handfuls baby spinach
1/4 red onion, thinly sliced
fresh basil, sliced (optional)
1/4 cup crumbled feta
10 grilled asparagus spears (premade)
4-5 grilled eggplant slices, cut into half (premade)

Dressing
2-3 tbsp. extra virgin olive oil
1-2 tbsp. balsamic vinegar
1-2 tsp. honey
salt and pepper

Directions
  1. On a plate, arrange all of the fruits and vegetables.  Garnish with crumbled feta cheese.
  2. To make the dressing, whisk together olive oil, balsamic vinegar and honey in a small bowl.  Add salt and pepper to taste.
  3. Drizzle dressing over salad and serve immediately.
