A super fun and super healthy snack for the summer!

Total: 10 min, plus overnight freezing
Ingredients
4 bananas, ripe but firm
8 popsicle or lollipop sticks
2 tbsp. coconut oil
1/2 cup dark chocolate chips
assorted sprinkles or chopped nuts, optional
Directions
- Line a baking sheet with wax paper or parchment paper.
- Peel and slice each banana in half, inserting a stick into the sliced end.
- Carefully arrange on the baking sheet and freeze overnight until solid.
- Once the bananas are frozen, prepare to dip them in chocolate.
- Arrange your toppings so that they are ready to be sprinkled immediately after the banana is dipped in chocolate.
- Melt coconut oil and chocolate chips in a small sauce pan on low heat. Stir often.
- Use one of two methods to coat the banana in chocolate: dip the banana into the saucepan and twirl to coat. Or, spoon chocolate over banana.
- Remove banana from chocolate and quickly sprinkle desired topping, coating evenly. The frozen banana paired with the coconut oil in the chocolate mixture, makes the chocolate form a shell and dry really fast.
- Serve immediately or return to the wax paper lined baking sheet. Freeze until ready to eat.
