Ingredients
1 cup milk, soy or almond milk
1/2 tsp. vanilla extract
1/2 cup pure pumpkin puree
1/2 tsp. chia seeds
pinch of salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. nutmeg
Toppings
toasted pecans or walnuts

1/2 tsp. butter or margarine

Directions
- In a pot, mix together oats, milk, chia seeds, salt and spices. Heat on medium for about 8 minutes, until the milk is warm. Stir occasionally.
- Add pumpkin puree and stir well. Cook for another 8 minutes, until mixture has thickened.
- Serve immediately garnished with toppings.
