1 cup unsalted butter or margarine
2 1/4 cups sugar
1 1/4 cups unsweetened cocoa (Dutch-process)
1 tsp. baking powder
1 tsp. salt
1 tsp. espresso powder (optional)
1 tbsp. vanilla extract
4 large eggs
1 1/2 cups flour
1 1/2 to 2 cups dark chocolate chips
3/4 cup pecan or walnut pieces (optional)
Directions
- Preheat the oven to 350 F and grease a 9"x13" baking pan. Set aside.
- In a small saucepan, melt butter. Then add sugar and stir to combine. Heat until it becomes hot, it will look shiny as the sugar melts.
- Transfer butter and sugar mixture to a medium sized bowl and stir in the cocoa, baking powder, salt, espresso powder and vanilla.
- Whisk in the eggs, stirring until smooth.
- Add the flour and stir until combined. Then add chocolate chips and pecans and stir well.
- Transfer batter into the prepared baking dish and bake for 30 minutes, or until a toothpick inserted into the centre comes out clean.
- Remove from the oven and cool before cutting into squares.
