An Asian inspired cucumber salad is easy to make and is a great side dish!

Ingredients
1 English cucumber, thinly sliced
1/2 tsp. salt
1 tbsp. sesame oil
2 tbsp. seasoned rice vinegar
1 tbsp. soy sauce
1 tsp. liquid honey
1/2 tsp. dried chili flakes
1 green onion, sliced into small pieces
1-2 tbsp. toasted sesame seeds, to garnish
Directions
- Place cucumber slices in a bowl and salt. Let stand for 15 minutes. Soak up excess liquid with a paper towel. To make the salad less watery, remove the seeds from the cucumber by cutting it lengthwise, scooping the seeds with a spoon and then slicing it.
- Whisk together sesame oil, rice vinegar, soy sauce, honey and chili flakes.
- Pour over cucumber slices and add green onion. Mix well and let marinate for another 5 minutes.
- Garnish with sesame seeds and serve immediately.
