1 cup water
1 egg
1 tsp. margarine, melted
1 cup flour
2 cups instant potato flakes
salt and pepper
Directions
- In a large bowl, mix together egg, margarine, water, salt and pepper. Add flour and potato flakes and mix well.
- Using your hands, knead dough. Add more water if dough is too dry, careful that the dough does not become sticky.
- Roll into "snakes" and cut into half inch pieces with a knife.
- Using the front of a fork, roll and press each gnocchi to form groves. This is just for decoration. You can also make them any shape you like.
- Bring a pot of water to boil and gently boil gnocchi until they float to the top, about 10 minutes. Cook for an additional 3-5 minutes.
- Remove gnocchi with a slotted spoon and serve with your favorite sauce.
