Serves: 4
4 chicken breasts
1 ripe mango, peeled and diced
6-8 strawberries, hulled and diced
1/3 cup dried cranberries
1 lime, juiced
1/4 red onion, finely chopped
1 green onion, chopped (optional)
1 jalapeno pepper, sliced
1 tbsp. shredded coconut, unsweetened
2 tbsp. apple cider vinegar or red wine vinegar
1-2 tsp. extra virgin olive oil
1-2 tbsp. orange juice
fresh cilantro or parsley, finely chopped (optional)
salt and pepper
Directions
- Grill chicken breasts on the barbecue or a George Foreman grill for 6-10 minutes, or until fully cooked.
- Combine all other ingredients in a bowl and mix well.
- Serve salsa on top of grilled chicken.
