Pear Muffins

Serves: 10-11 muffins
Prep Time: 10 min

Total:  30 min

Ingredients
1 1/2 cups flour (white and whole wheat mix)
1 1/2 tsp. baking powder
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. ground ginger
pinch of salt
2 eggs
1 tsp. vanilla essence
zest of 1 lemon
1/3 cup brown sugar, packed
2-3 tbsp. vegetable oil
1 cup unsweetened apple sauce
1 ripe bosc pear, cut into thin slices

Directions
  1. In a large bowl, mix flour, baking powder, spices and salt.
  2. In a separate bowl, whisk together eggs, vanilla, zest, sugar, oil and apple sauce.
  3. Add wet mixture into the dry bowl and stir until combined.
  4. Spoon into the wells of a greased muffin tin and push three pear slices into the batter of each muffin.
  5. Bake in a preheated oven at 400F for 20 minutes.
  6. Remove from oven and let cool for 5 minutes before serving.
