Stuffed French Toast

Jazz up the classic French toast by stuffing it with different fillings.

Serves:  1
Prep Time: 5-6 min
Cooking Time: 8-10 min
Total: 15 min

Ingredients
2 pieces of bread, white, whole wheat or multigrain
1 egg, scrambled
1/4 cup milk, soy milk or almond milk
1/2 tsp. butter or margarine
fresh fruit and maple syrup to garnish

Fillings
nutella and banana slices
peanut butter and jam
ricotta cheese, sugar and lemon juice/zest
ricotta cheese, sugar and sliced fresh strawberries

Directions
  1. Make a sandwich with a generous amount of filling and two pieces of bread. 
  2. In a large flat dish, whisk together scrambled egg and milk.
  3. Soak entire sandwich the egg mixture, then carefully flip and soak the other side.
  4. On medium heat, melt butter in a frying pan. Add egg soaked sandwich and cook for about 3-5 minutes.  Flip and cook the other side for 3-5 min.
  5. Once both sides are browned, garnish with maple syrup and fresh fruit.
