Ingredients
1 cup almond milk or soy milk
2 tbsp. coconut milk
1/2 tsp. lemon juice
1/2 cup rolled oats
1 large carrot, grated
1 tsp. vanilla extract
1 tsp. cinnamon
1/4 tsp. ground ginger
dash of nutmeg
pinch of salt
2 tbsp. maple syrup
Garnish
pecan or walnut pieces
shredded coconut
raisins
cinnamon

Directions
- In a medium pot, heat almond milk, lemon juice, coconut milk and spices. Stir while heatings.
- Once warm, add grated carrot and oats. Lower heat when oatmeal starts to boil. Cook for about 5-8 minutes, stirring frequently.
- When the mixture has thickened, stir in vanilla and maple syrup.
- Serve immediately, topped with pecan or walnut pieces, raisins, and shredded coconut. Add more almond milk or coconut milk to thin oatmeal, and maple syrup to sweeten.
