Apple Cinnamon Breakfast Parfait

Serves: 4
Prep Time: 5-8 min
Cooking Time: 15 min
Total:  20 min

Ingredients
3 apples, peeled, cored and chopped
1-2 tsp. ground cinnamon
1/4 tsp. ginger powder
1/8 tsp. ground cloves
1/8 tsp. ground nutmeg
pinch of salt
1/4 cup water
2-3 tbsp. brown sugar, packed
2 tbsp. lemon juice
plain Greek yogurt
granola

Directions
  1. In a pot, combine apples, spices, water, sugar and lemon juice.  Bring to a boil and cook for 10-15 minutes, until the apples are tender.  Let cool.  Apple mixture can also be made in advance and refrigerated.
  2. In a glass or jar, layer apple mixture, yogurt and granola, then repeat.
  3. Serve immediately.
