Bell Pepper Ringed Eggs

Fry up your eggs inside red pepper rings. Fun and tasty!
Red pepper ringed eggs with toast, mushrooms and tomatoes

Serves: 2
Prep Time: 1 min
Cooking Time: 5-6 min
Total:  7 min

Ingredients
4 eggs
1 red, orange, yellow or green bell pepper, cut into 4 thick rings
salt and pepper
1 tsp. butter or margarine

Directions
  1. On medium heat, melt butter in a frying pan.
  2. Place pepper rings flat in the pan, then crack an egg into the centre of each ring.  Sprinkle with salt and pepper.
  3. Cook covered for 5 minutes, or until eggs are done to your liking.
  4. Garnish with sliced green onion, and serve immediately with toast.
