Ingredients
4 eggs
1 red, orange, yellow or green bell pepper, cut into 4 thick rings
salt and pepper
1 tsp. butter or margarine

Directions
- On medium heat, melt butter in a frying pan.
- Place pepper rings flat in the pan, then crack an egg into the centre of each ring. Sprinkle with salt and pepper.
- Cook covered for 5 minutes, or until eggs are done to your liking.
- Garnish with sliced green onion, and serve immediately with toast.
