225 g egg noodles
3/4 cup cottage cheese
1/2 cup butter or margarine, melted
2/3 cup sugar (or 1/3 sugar, 1/3 apricot jam)
1 lemon, juiced
5 eggs
1/4 cup milk
1 tin crushed or diced pineapple
2 tsp. ground cinnamon

Directions
- Cook noodles as directed on package. Drain and rinse with cold water.
- In a large bowl, combine eggs, cottage cheese, sugar, butter, milk and lemon juice. Stir well.
- Transfer noodles to a large casserole dish and dot with pineapple.
- Pour egg and cheese mixture over noodles, and using a fork, stir until all noodles are coated.
- Sprinkle with cinnamon, or a cinnamon sugar mixture.
- Bake in a preheated oven at 325 F for 45 min to an hour.
- Serve warm or at room temperature as side dish.
