Ingredients
1 head of cauliflower, washed and leaves removed
3 tbsp. butter, divided
2 tbsp. flour
1 tsp. mustard powder
3/4 cup milk
1/2 cup grated cheddar cheese
salt and pepper
1 tsp. dried oregano
1/4 cup bread crumbs

Directions
- Steam cauliflower in a large pot with water, for 20 minutes, or until tender.
- While cauliflower is steaming, melt 2 tablespoons of butter in a saucepan and mix in flour to make a roux. Add mustard powder, salt and pepper, and let roux cook for about a minute.
- Slowly add milk, stirring continuously, until thickened. Add cheese and let melt.
- In a small frying pan, melt 1 tablespoon of butter on low heat. Add breadcrumbs, oregano. Cook for 3-4 minutes until mixture becomes lightly browned, stirring continuously.
- Transfer steamed cauliflower to a dish. Cover with cheese sauce and sprinkle with bread crumbs.
- Serve immediately.
