Baked Cauliflower Cheese

Baked cauliflower topped with a cheesy sauce and breadcrumbs.

Serves:  6
Prep Time: 20 min
Cooking Time: 20 min
Total: 40 min

Ingredients
1 head of cauliflower, washed and leaves removed
3 tbsp. butter, divided
2 tbsp. flour
1 tsp. mustard powder
3/4 cup milk
1/2 cup grated cheddar cheese
salt and pepper
1 tsp. dried oregano
1/4 cup bread crumbs

Directions
  1. Steam cauliflower in a large pot with water, for 20 minutes, or until tender.
  2. While cauliflower is steaming, melt 2 tablespoons of butter in a saucepan and mix in flour to make a roux.  Add mustard powder, salt and pepper, and let roux cook for about a minute.
  3. Slowly add milk, stirring continuously, until thickened.  Add cheese and let melt.
  4. In a small frying pan, melt 1 tablespoon of butter on low heat.  Add breadcrumbs, oregano.  Cook for 3-4 minutes until mixture becomes lightly browned, stirring continuously.
  5. Transfer steamed cauliflower to a dish.  Cover with cheese sauce and sprinkle with bread crumbs.
  6. Serve immediately.
